Sustainability
We're a small brewery and taproom in the middle of Carlisle. We're not going to pretend we've got all of this figured out, so here's what we actually do rather than what sounds good.
The beer never leaves the building
Our beer is brewed in the same room it's poured in. It goes from the tank, to steel keg or cask, to the tap a few feet away. No lorries, no warehouses, no secondary packaging (for the most part), and it reaches you fresher than beer that's had to travel. A small range of our higher volume beers we get packaged off site, this means it is still brewed on site but is sent to Cockermouth (just 25 miles away) where it is packaged into keg, before returning to the taproom. This ethos of beer that never leaves the building is close to our hearts and it is our long term goal to fully fulfil this statement.
What happens to what's left over
Brewing produces a lot of spent grain. Ours goes to a local farm for animal feed rather than going to waste. We work closely with Halsford Farm, based just 15 miles away, who collect the grain weekly.
Our kegs and casks are stainless steel. We clean them and refill them on site and use them again and again. When we package beer we use cans, because aluminium is lighter to move and fully recyclable.
Where our ingredients come from
All our malt comes from Crisp Maltings, using British barley. Behind the bar we pour spirits from Solway Spirits, made just up the road, alongside other local suppliers.
Our pizza menu changes with what's good and available, which is why we don't have a paper food menu and the toppings may change from week to week.
The community bit
Our community is at the heart of our business. Locals Thursday offers everyone two of our most popular beers at just £4.50 a pint, every Thursday.
Cask Club Sundays means every West Walls cask beer is just £3.50 a pint, every Sunday. We run live music, DJ nights and events regularly, if you want to see whats coming up click here.
A working brewery in the middle of a city only makes sense if the city gets something out of it.
What we're still working on
Plenty. We're a young business in an old building and the list is long. When we sort something, it'll appear on this page rather than in an announcement.
